Smörgås owner Morten Sohlberg prepares dinner for model Helena Christensen and actress Liv Tyler at Helena's house in the West Village.  

"During the 1950s and early 1960s, when Scandinavian furniture, fabrics and tabletop wares were coveted by optimistic postwar American modernists, Smorgasbords- with their hot dishes such as Swedish meatballs, pate and cheeses - were quite popular. For your own holiday entertaining this year, why not Smorgasbord redux?

Helena wanted some culinary support on this particular party night, so she called on Morten Sohlberg, owner of Smorgas Chef, a trio of Scandinavian restaurants in Manhattan. Sohlberg prepared tonight's menu, which consists of three kinds of herring (tomato, red beet and cream, and onion and mustard); Swedish meatballs (made with pork, beef, and veal); mashed potatoes; cucumber salad; and, for dessert, rice pudding with warm cherry sauce and vanilla waffles with cloudberry preserves.

This, Morten explains, is a traditional version of the Scandinavian Smorgasbord."
